Simple sugar biscuits with strawberry jam middles
YOU NEED:
Self-raising flour – 200g
Caster sugar – 100g
Unsalted butter – 100g
Egg – 1 beaten
Jam – 10 tsp
MAKE IT:
1. Heat the oven to 190C / 170 Fan.
2. Add the flour, sugar and butter to a bowl and rub together until it resembles breadcrumbs.
3. Add the egg and combine to form a solid dough. Split the dough into small balls (approx. 10) and squish them down to make a pebble shape. Use your thumb/finger (or a base of a wooden spoon) to make a small indentation in the middle. Fill the holes with a tsp of jam
4. Place on a lined baking sheet and pop in the oven for 10-15 mins.
5. Allow to cool before enjoying – the jam will be very hot!

This is a really simple recipe and perfect for little ones to get involved. Gigi’s favourite part is cracking the egg and spooning in the jam. Super messy and very sticky but definitely lots of fun.
