CHEESY VEGETABLE BAKE

This super yummy recipe will make everyone in your family happy to eat their veggies.

Easy cheesy vegetable bake



YOU NEED:


Cauliflower – half head, broken into florets

Broccoli – half head, broken into florets

Carrot – 2, sliced

Courgette – 1, sliced

Frozen Peas – 3 tbsp

Butter – 50g

Flour – 50g

Mustard powder – 1 tsp

Arla Big Milk – 500ml

Strong cheddar – 120g grated

Nutmeg – pinch

Black pepper – to season

Breadcrumbs – 20g


MAKE IT:


1. Heat oven to 200C/180C fan/gas 6. In a large pan, cook the cauliflower and carrots in boiling salted water for 5 mins. Add the broccoli, courgetti & peas and cook for 3 mins more.

2. Drain well once cooked. (I like to lay mine out on kitchen paper to soak up any excess water). Transfer the cooked veggies to an ovenproof dish.

3. To make the cheese sauce, melt the butter in a pan. When foaming, add the flour & mustard powder, and cook for 1 min, stirring constantly. Take off the heat and add the Arla Big Milk, a little at a time, stirring constantly to get rid of any lumps.

4. Once half the milk has been added, return to the heat and add remaining milk. Keep stirring and bring to the boil, then turn down to a simmer and cook for 2 mins, until thickened and smooth. Add 100g of the cheese and season with nutmeg and black pepper. Mix the remaining cheese in a bowl with the breadcrumbs.

5. Pour the sauce over the vegetables and sprinkle with the breadcrumbs & cheese mix. Cook in the oven for 20 mins until bubbling.
