Fast food can be a healthy treat with these hidden veggie hamburgers. Your fussy eater will never know there's sneaky carrot & courgette packed into these tasty oven baked burgers.
Beef burger • Crunchy carrot chips • Pickle, red onion, tomato & cheddar star • Salad • Olives.
YOU NEED:
Minced beef – 500g (low fat)
Onion – 1
Carrot – 1
Courgette – 1
Garlic – 1 clove crushed
Worcester sauce - tsp
Pinch of Paprika
Pinch of Salt
Dried herbs – ½ tsp
Black pepper - to season generously
Unsalted butter – 1 tbsp
Olive oil – 1 tbsp
Marmite – 1 tsp
MAKE IT:
1.Preheat the oven to 170 C/ 150 Fan. Grate the carrot, courgette and onion and add to a bowl with the beef mince. Add the garlic, Worcester sauce, paprika, salt, black pepper & dried herbs. (I used Italian mixed herbs).
2. Gently combine the ingredients together with your hands. Don’t work the mixture too much or it will fall apart. Then divide the mixture into patties – you should get 8-10 depending on the size.
3. Melt the butter and stir in the olive oil & marmite. Place the patties on a baking sheet and brush with the butter mixture.
4. Pop in the oven to cook for 15 mins. Alternatively you can cook on a hot griddle or BBQ for 5 mins each side.

Here’s a little story...
While Gigi was getting ready for school, I said to her “what do you fancy for dinner tonight?” (I don’t usually ask her, but just thought I’d see what she’d suggest. I suspected it would be sausages or pasta).
Her response:
“A burger Mummy - I want a cheeseburger please”
“A cheeseburger??” I replied
“Actually no, not a cheeseburger! A hamburger - I want an HAMBURGER MUMMMY”.
It just made me laugh because we rarely have burgers & I didn’t think she even knew the name of it...but it must come from school! Toddlers definitely bring the comedy value don’t they.
So she got a burger...& I managed to sneak in some extra veggie goodness.
