PESTO PUFF TARTS

Take a sheet of puff pastry, add some yummy pesto & cheese and pop them in the oven. Delicious!


Red pesto, tomato, basil & cheese puff pastry tarts • Tomato, cucumber & strawberry



YOU NEED:


Puff pastry – 1 ready rolled sheet

Red pesto – 8 tbsp

Cheddar cheese – 25g grated

Fresh tomato – 8 slices

Mozzarella – 100g

Basil – fresh leaves

Egg – 1 whisked


MAKE IT:


1. Heat the oven to 190C/170C Fan. Roll out the pastry & slice into 8 smaller pieces. Use a knife to score 1cm around the edges.

2. Spread a spoonful of pesto over the middle section of each pastry slice, leaving the edges.

3. Sprinkle a little cheese onto each one. Add a slice tomato, slice of mozzarella and a couple of fresh basil leaves.

4. Use a pastry brush to wash the edges with the whisked egg and pop into the oven to bake for 18 mins until golden & puffy around the edges.

I've tried lots of different toppings on this simple puff tart, but this classic pesto & mozzarella is my favourite.

I love making these little puff pastry tarts and we’ve tried them with a variation of different fillings.

They are super yummy with green pesto or just a simple tomato sauce base and we love to add in ham, tuna, courgette, mushrooms & egg. We’ve even tried a sweet version with Nutella & banana.

This classic pesto & cheese has to be my favourite though. Perfect for a light dinner or easy lunch served with fresh salad or veggies
